A simple ammonia and water mix will keep snails away from your garden. Ammonia will turn to nitrogen later, which will benefit your plants. The ammonia will kill the snails that are doing damage to your plants and garden. Spray the mixture on your garden daily until you see the snail population die off.
Save some plants in the winter by bringing them indoors. You should probably save the most resistant or expensive plants. Dig the plant up without damaging the roots and place it a big enough pot.
